One of the unexpected turns in this journey was the premature birth of my niece. It was a challenging and uncertain time, but I knew I had to be there for my sister and her baby. While visiting my sister and her baby in the hospital, I wanted to provide them with a home-cooked meal. However, I had to work with limited resources and unfamiliar kitchen equipment. I share my experience of improvising and creating a delicious and nutritious meal for my family.

Cooking in someone else's kitchen can be challenging, but it also allows for creativity and resourcefulness. I made use of the ingredients available and prepared fajitas, oat bars, and a refreshing salad. It's a reminder that we can adapt and make the best of any situation.
